Black beans and rice, cheese, yellow peppers, hummus, whole wheat crackers, strawberries and a hard boiled egg. This lunch belonged to Monday, which was our busy day. Ethan has a two hour mommy and me class in the mornings that includes lots of outdoor play and running around and he's always starving for a snack, so I like to give him lots of snacking options with his lunch on Mondays.
This lunch was part of our Tot School O week curriculum. I made hotdogs shaped as octopus for our group Tot School class that meets once a week. For these, I used Applegate's organic turkey hotdogs and included some watermelon and oranges, strawberries, cheese and tomatoes, carrots, crackers and hummus.
If it's too early to be rightfully obsessed with Halloween then, well, I just want to be wrong. The pumpkin is made from cheese and shredded carrot, the skeleton is peanut butter on whole wheat bread with raisin eyes and a strawberry nose. I also wrote "Boo" in watermelon and included it on top of the strawberries. Because it wouldn't be Ethan's lunch without hummus somewhere, I also included some hummus with carrots and cucumber slices.
This one had some leftover homemade veggie macaroni and cheese, applesauce, peach slices and an assortment of veggies (cucumber, tomatoes and carrots) with hummus.
The XO lunch is a peanut butter sandwich (the X) with a hardboiled egg half (the O). I also included some tomatoes, some Annie's bunny grahams, some cheese, watermelon and then applesauce with raisins.
