I had posted a picture of today's Easy Lunchboxes masterpiece on Instagram earlier and thought I'd share this super easy recipe. These could easily be made with sweet potatoes, but we had leftover mashed potatoes from last night's dinner so I used those. Any vegetable could also work (I've done these with spinach before) but we also had broccoli leftover from last night's dinner so, you know, it just made sense. Plus, broccoli is Ethan's favorite food so it's a win all around. (I still can't figure out how I birthed someone who enjoys consuming his body weight in broccoli. Mind blown.)
You'll just need potatoes, broccoli (or a vegetable of your choice) and black beans. For the outside breading, you just need flaxseed, wheat germ and breadcrumbs.
For starters, I just chopped up the broccoli into tiny little pieces.
I cooked some black beans and seasoned them with red pepper flakes, cumin and black pepper. Once they were ready, I stirred in some cheese just because, well, Ethan doesn't think you can ever go wrong with cheese.
Stir in the potatoes and broccoli into the black bean mixture and form into golfball sized balls. In a separate bowl, I mixed 1/2c breadcrumbs, 1/8c wheat germ, some flaxseed, black pepper and some cumin (to taste). Combine and dip the potato balls into the breadcrumb mixture until coated. Line up on a baking sheet and bake at 275 degrees for 25 minutes.
