two minute brownies? in the microwave? don't mind if i do.


It's been hectic around here lately. One of our kitties hasn't been feeling well and it's been an adventure rushing to and from the animal hospital with an infant (who has suddenly developed a hatred for the car) in tow. We finally received the good news we were hoping for today after another trip to the hospital, this time to see an internal medicine specialist, and I'm still soaking in the feeling of relief that is busily permeating through my body.

Ethan is asleep for the evening and I am so looking forward to flopping down on the couch with my husband and letting the television rot my brain. I absolutely hate television and have said on many instances that I can completely live without it but, for some reason, all I want to do right now is just sit in front of the television and help my DVR clear off all of those programs it's been so nicely storing for me.

A friend of mine had shared this recipe with me for a two minute mug brownie that is made in the microwave and is also gluten-free. I thought tonight would be the absolute perfect evening to magically have a brownie appear -- all warm and chocolatey and moist and spongey and delicious! -- after two minutes. My husband skeptically listened to my plans to make a brownie in a mug in the microwave in two minutes but was pleasantly surprised to discover that, yes, this made a brownie. A warm, chocolatey, moist, spongey and delicious brownie. (Albeit not the most attractive brownie in the world as I'm just not very good in the kitchen!)

Who could ask for more?!

You'll need:
- 1/4c gluten-free (or regular) all-purpose flour
- 1/4c brown sugar
- 2 Tbsp unsweetened cocoa powder
- a pinch of salt
- 2 Tbsp oil
- 2 Tbsp milk


Combine dry ingredients in a microwave safe mug.


Stir to combine until there are no clumps left.


Add oil and milk.


Stir to make a thick paste/batter.


Microwave for one minute. You'll find you have a fluffy, spongey, delicious brownie! (And hopefully one that is a lot cuter than mine!)

  1. Oh my gosh... I am in trouble! I LOVE brownies, and this is too, too easy. Putting cocoa powder on my grocery list now.
